For the past few months, the very chic district of Saint-Germain-des-Prés has been welcoming a new restaurant that aims to be the trendy headquarters of the Parisian fauna: Silencio des Prés.
Ten years exactly after the opening of its big brother the 'Silence', rue de Montmartre (2nd arrondissement) the Assembly group inaugurated the 'Silencio of the Meadows', instead of the Beau Regard restaurant. A magnificent restaurant with a cozy atmosphere
To give life to this new Left Bank address, the space of 900 m2 was left in the hands and completely redesigned by Studio KO. Square tables, bar, circular alcoves and fluted woodwork mingle with leather banquettes, black bistro chairs and large designer lights... The French architect duo endowed this former cabaret hall with a beautiful, very subdued atmosphere. Moreover, as soon as night falls, the music goes up a notch and the Silencio des Prés matures into a festive restaurant that has nothing to envy to the others… Let the party begin!

A menu highlighting the classics of the Parisian brasserie
In the kitchens of Silencio of the Meadows, we find William Sanchez. The starred and non-conformist chef shakes up the classic dishes from the Parisian brasserie by offering us his own version of these iconic dishes. On the menu: scallop carpaccio, matured beef tartare, croque-monsieur, cheeseburger, sausage and Kintoa pork purée… Here, the famous apple herring in oil comes in “Mackerel / verjuice / honey and mustard”. We also recommend the red tuna, red shizo and fermented strawberry tartare, the very tasty saithe, black pudding, black radish accompanied by mashed potatoes as well as the very successful John Dory with seasonal vegetables.
Very committed, Guillaume Sanchez only cooks vegetal and fish. For him, ethical definitely rhymes with culinary pleasure since "it's about respecting the men and women who cultivate the planet and reinvent the model of traditional catering while giving pleasure to people"... On the bar side, the cocktail menu makes you dizzy ! She is signed Remy Savage, one of the most talented bartenders of his generation.

Silencio of the Meadows invests in a site steeped in history, nestled in a mythical neighborhood haunt of bohemian spirits and the New Wave, the cradle of existentialism. It is in this unique spirit and this intellectual, creative and festive bubbling known throughout the world that the latest addition to the Assembly group is part of with the intention of perpetuating this unique heritage.
This sublime spot dedicated to welcoming and bringing together creative and festive worlds is a wonderful illustration of Parisian nightlife and its international influence.
