Bouillon Racine

Silencio of the Meadows

The pitch : For the past few months, the very chic district of Saint-Germain-des-Prés has been welcoming this new restaurant which aims to be the trendy headquarters of the Parisian fauna. In the kitchens of Silencio of the Meadows, we find William Sanchez. As committed as he is non-conformist, the starred chef only cooks vegetal and  fish and shake them classic dishes from the Parisian brasserie by offering us his own version of these iconic dishes. On the menu: scallop carpaccio, matured beef tartare, croque-monsieur, cheeseburger, Kintoa pork mash sausage… We also recommend the red tuna tartare, red shizo and fermented strawberries, the very tasty saithe, black pudding black, black radish accompanied by mashed potatoes as well as the very successful Saint-Pierre with vegetables of the moment… On the decoration side, Studio KO signed a chic, refined and very left bank staging that plays on warm colors. We then discover a pretty shades of yellow, green, black. An address that lives 7 days a week, from breakfast to the last drink, when the restaurant closes.
