The iconic restaurant Il Carpaccio, led by the couple of Italian chefs Oliver Piras and Alessandra Del Favero, has become a reference in terms of gourmet Italian cuisine. In 2022, the restaurant was awarded a michelin star which he keeps for 2023.

A couple of talented chefs 

In the kitchen, a duo of efficient and motivated Italian chefs, Oliver Piras and Alessandra Del Favero ! This couple in the city and in the kitchen is united by their shared love of great Italian cuisine. Oliver cut his teeth at Noma in Copenhagen (crowned best restaurant in the world), and by the kitchens of Joel Robuchon. Alessandra, deepened her knowledge in her family's hotel, in the heart of the Dolomites. It was there that together they created Aga, restaurant which was crowned with a first star in 2016. An alliance of technique and tasty ideas that give rise to a modern and light Italian cuisine. In October 2021, they join Carpaccio

A culinary show, performed before your eyes during your meal? We loved the concept. Oliver Piras et Alessandra Del Favero don't only officiate in the kitchen, as is the case in many starred restaurants… For the signature dishes, the couple of chefs come out of their kitchen to offer you a live culinary show! A true gastronomic experience!

A menu between authenticity and elegance

The Chefs offer you a cuisine italian revisited, authentic and gourmet, yet refined. It gives pride of place to products from exceptional quality, straight from Italy! The name of the restaurant Il Carpaccio is obviously linked to this essential dish of Italian gastronomy. It is thus revisited each season, according to the desires and inspirations chiefs. We loved the carpaccio truffled beef with Caesar sauce. Finally, don't miss the Paccheri alla Vittorio, the chef duo's signature dish, or the elephant's ear, a breaded veal chop with three tomato sauce and its fresh parmesan. 

As for the desserts, they were thought out by the chef pâtissier of the Royal Monceau, Quentin Lechat. This one revisits the Italian classics by bringing them a unique personal touch: tiramisu, pineapple carpaccio, chocolate ravioli... Finally, on the wine side, the best cuvées from the vineyards of Piedmont ou of Tuscany have been selected.
