Yes, and it doesn&#8217;t do things by halves. <\/h2>\n\n<p>Located a stone&#8217;s throw from Place des Vosges, <strong>Baratruf<\/strong> is <strong>the very first truffle bar in the capital<\/strong>. At the helm is <em>Pierre-Ivan d&#8217;Arfeuille<\/em>, aka Piv, a passionate truffle grower from Burgundy. He grows his truffles in Pignol, on a family estate where over 1,500 trees have been planted with respect for the terroir. Local, committed production, fully controlled from tree to plate.   <\/p>\n\n<p>This unique counter pays tribute to the <strong>Burgundy truffle<\/strong>, long overshadowed by its famous P\u00e9rigord cousin. To preserve its flavour, Piv adopts its own technique: infusion in a fatty substance, deep-freezing when fully ripe, then gentle thawing to release the flavours at the perfect moment.   <\/p>\n\n<h2 class=\"wp-block-heading has-text-align-center\">Refinement without snobbery<\/h2>\n\n<p>Baratruf&#8217;s ambition is clear: to <strong>democratize an exceptional product<\/strong>, without sacrificing quality. Here, truffles are used where they are least expected: on <strong>creamy burrata<\/strong>, in <strong>delicate carpaccio<\/strong>, in <strong>comforting focaccia<\/strong>, and even melted into <strong>truffled Vache qui Rit<\/strong>. A bold, assertive choice that breaks the codes of a gastronomy that is all too often elitist.  <\/p>\n\n<p>And to accompany this <strong>festival of flavors<\/strong>?
