In a discreet district of Paris’s 14th arrondissement, Les Petits Parisiens appeals to lovers of authentic, generous bistronomic cuisine. Formerly known as La R\u00e9galade, this institution is the very cradle of bistronomy, a concept born under the impetus of chef Yves Camdeborde, then enriched by Bruno Doucet. <\/strong><\/p>\n\n

Today, Arnaud Duhem<\/strong>, already at the helm of Les Petits Princes<\/strong> restaurant in Suresnes, is carrying on this tradition, infusing it with new energy<\/strong> while respecting the DNA of the place.<\/p>\n\n

A place steeped in history and a new vision<\/strong><\/h2>\n\n

The 49 avenue Jean Moulin address has existed as a food business since 1904<\/strong>. It was here that bistronomy took off<\/strong>, initiated by Yves Camdeborde, who wished to combine gastronomic rigor<\/strong> with a convivial bistro atmosphere<\/strong>. Overlooking the sidewalk, La R\u00e9galade has long been a haunt for epicureans<\/strong>, delighted by its generous, no-fuss yet technically precise cuisine<\/strong>. <\/p>\n\n

In taking over this Covid institution, Arnaud Duhem is neither seeking to reproduce the past nor to distance himself from it completely<\/strong>. His ambition is to perpetuate the spirit of sharing and pleasure, while adding his own personal touch<\/strong>. His project is based on quality, seasonal cuisine, accessible and warm<\/strong>, supported by a selection of natural, organic and biodynamic wines<\/strong>. <\/p>\n\n

A passionate conductor and an exceptional career<\/strong><\/h2>\n\n

Originally from Toulouse<\/strong>, Arnaud Duhem always knew that his future lay in the hotel and restaurant business<\/strong>. After initial experience at Vanel in Toulouse<\/strong>, he moved to Paris, where he trained alongside such greats as Jean-Louis Costes and Pierre Herm\u00e9<\/strong>. He then joined the Ducasse<\/strong> Group, where he specialized in high-end management and service, before becoming Director of Food & Beverage<\/strong> at the Park Hyatt Paris-Vend\u00f4me<\/strong>, then at the Shangri-La H\u00f4tel Paris<\/strong>, also as Director of Food & Beverage<\/strong> when it opened. <\/p>\n\n

In 2012, he decided to strike out on his own, creating Carpe Duhem<\/strong>, a hotel and restaurant consultancy, before realizing his ultimate dream by opening Les Petits Princes in Suresnes<\/strong>. With Les Petits Parisiens<\/strong>, he has come full circle, returning to one of the founding places of bistronomy. <\/p>\n\n

At Les Petits Parisiens<\/strong>, the cuisine is comforting and convivial<\/strong>, respecting fresh seasonal produce<\/strong>. Arnaud Duhem favors direct sourcing from producers<\/strong>, guaranteeing optimal quality and exemplary traceability<\/strong>. Dishes are carefully crafted, boldly<\/strong> combining textures and flavors<\/strong> without ever betraying the very essence of bistro cuisine.
