Behind this decision? A vision: that of a cuisine in harmony with the living.  <\/strong><\/p>\n\n<h2 class=\"wp-block-heading has-text-align-center\">A global call to culinary awareness<\/h2>\n\n<p>As part of its \u201c<strong>In Harmony with Life<\/strong>\u201d program, supported by<strong>UNESCO<\/strong>, Relais &amp; Ch\u00e2teaux is encouraging its establishments to <strong>take concrete action<\/strong> for marine biodiversity. Each chef is invited to remove <strong>at least one endangered species<\/strong> from a regionally-defined list. <\/p>\n\n<p>In Europe, the five target species are :<\/p>\n\n<ul class=\"wp-block-list\">\n<li><strong>European eel<\/strong>,<\/li>\n\n\n\n<li><strong>wild Atlantic salmon<\/strong>,<\/li>\n\n\n\n<li><strong>cake<\/strong>,<\/li>\n\n\n\n<li><strong>Mediterranean hake<\/strong>,<\/li>\n\n\n\n<li><strong>Atlantic mackerel<\/strong>.<\/li>\n<\/ul>\n\n<p>This choice is based on analyses by <strong>the NGO Ethic Ocean<\/strong>, a long-standing partner of the association.<\/p>\n\n<h2 class=\"wp-block-heading has-text-align-center\">The strength of the network: 580 chefs, one message<\/h2>\n\n<p>This movement didn&#8217;t come out of nowhere. Back in 2009, Relais &amp; Ch\u00e2teaux made a name for itself by collectively removing <strong>Northeast Atlantic bluefin tuna<\/strong> from its menus. The result? As <strong>Mauro Colagreco<\/strong>, vice-president of the association, points out: <br\/><em>\u201cWhat we refuse to serve is as important as what we choose to put forward.\u201d<\/em><\/p>\n\n<h2 class=\"wp-block-heading has-text-align-center\">Eels in focus<\/h2>\n\n<p>An emblematic species of French gastronomy, the<strong>European eel (Anguilla anguilla)<\/strong> is now one of the most endangered species. The response from chefs? Eloquent: <strong>84%<\/strong> of them say they don&#8217;t serve it. And of those who do, <strong>a third have done so in response to an appeal<\/strong> launched in 2023 by Relais &amp; Ch\u00e2teaux.   <\/p>\n\n<p><strong>Gilles Boeuf<\/strong>, President of Ethic Ocean, insists on the crucial role played by restaurateurs:<br\/><em>\u201cBy verifying origins, fishing or farming techniques, chefs influence the entire industry.\u201d<\/em><\/p>\n\n<h2 class=\"wp-block-heading has-text-align-center\">Relais &amp; Ch\u00e2teaux: redefining luxury<\/h2>\n\n<p>At a time when luxury can no longer ignore its impact, Relais &amp; Ch\u00e2teaux is asserting its vision: <strong>sustainable, local and responsible luxury<\/strong>. The withdrawal of endangered species does not signal the end of refinement, but the invention of <strong>new culinary narratives<\/strong>, rooted in seasons, territories and preservation. <\/p>\n\n<p>With this in mind, the association is encouraging a <strong>fresh look at seafood<\/strong>. Less scarcity, more awareness. Less prestige at all costs, more transmission of best practices.  <\/p>\n\n<h2 class=\"wp-block-heading has-text-align-center\">What&#8217;s next?<\/h2>\n\n<p>Relais &amp; Ch\u00e2teaux is not stopping there. The initiative will be <strong>repeated every year<\/strong>, with support for chefs as they develop their sourcing, and transparent communication with customers.
