It’s a first: sustainable gastronomy makes its debut in one of Paris’s cultural temples. Chef Thierry Marx inaugurates R\u00e9s\u00e9da Caf\u00e9, a hybrid eatery set up on the mezzanine floor of the Grand Palais, in the heart of the 8\u1d49 arrondissement. This new caf\u00e9-restaurant doesn’t just feed: it proposes a vision, where taste, social commitment and openness to the greatest number coexist with exacting standards. <\/strong> <\/p>\n\n

An inclusive table for all<\/h2>\n\n

R\u00e9s\u00e9da Caf\u00e9, conceived in collaboration with the SSP group, offers<\/strong> a ticket-free service<\/strong> for visitors and local residents alike. Featuring a cafeteria, sit-down dining and brunch on Sundays, the idea is to recreate a living<\/strong>, breathing space within the renovated Grand Palais. <\/p>\n\n

Thierry Marx, true to his commitments, aims for a democratized gastronomy<\/strong> that respects both products and people. A cuisine of transmission and hospitality<\/strong>, which resonates with the main principles of his Cuisine Mode d’Emploi(s)<\/em> network. <\/p>\n\n

A seasonal, local and plant-based menu<\/h2>\n\n

Conceived as a natural extension of the cultural journey, the R\u00e9s\u00e9da Caf\u00e9 menu favors seasonal produce, sourced from short supply chains in the Paris region<\/strong>. This is the Marx style: simple yet rigorous, generous yet precise. <\/p>\n\n

On the menu: watercress velout\u00e9 with poached egg, linguine with market garden pesto, duck burger with fig chutney or a tarte Tatin-style waffle. Vegetarian dishes<\/strong> are not forgotten (roasted carrots, braised milks, Parisian sauce). Desserts<\/strong> pay homage to the French pastry-making tradition, with a light touch. <\/p>\n\n

Each plate reflects the chef’s intention: a balanced gastronomy<\/strong> that is responsible, gourmet and inclusive.<\/p>\n\n

Architecture designed as a soothing belvedere<\/h2>\n\n

Set in over 500 m\u00b2 of light-filled space, R\u00e9s\u00e9da Caf\u00e9 is also an aesthetic manifesto<\/strong>. Conceived with Atelier Senzu<\/strong> and designer Samy Rio<\/strong>, the space blends sober plant life, modular furniture, reseda tones and comfortable seating. Overlooking the central square of the Grand Palais, the space becomes an urban belvedere<\/strong>, a living observation point between Paris and architecture. <\/p>\n\n

A place for sharing, between heritage and everyday life<\/h2>\n\n

R\u00e9s\u00e9da Caf\u00e9 aims to be more than just a place to<\/strong> cook, it’s a place to meet people and share experiences<\/strong>. Culinary animations, taste workshops, family formats and cultural events will punctuate the year, in direct connection with the Grand Palais program. <\/p>\n\n

In this sense, it is in keeping with the renewed vocation of the Grand Palais<\/strong>: to open its doors to all forms of culture, audiences and now… cuisine.<\/p>\n\n
