For the past few weeks, the restaurant has been offering a six-part tasting menu designed in collaboration with <strong>The Macallan<\/strong>, the world&#8217;s leading <strong>single malt whisky<\/strong> house. <\/p>\n\n<p>At the heart of this experience is <strong>La Perle de Speyside<\/strong>, an unexpected culinary ritual in which whisky mingles with Japanese tea in a refined setting, far removed from the clich\u00e9s of a hushed end to a meal. This partnership between a Parisian palace and a Scottish distillery questions the role of whisky at the table, opening it up to a more curious and less codified clientele. <\/p>\n\n<h2 class=\"wp-block-heading has-text-align-center\">A daring ritual, far from fixed traditions<\/h2>\n\n<p>The idea is simple but demanding: dilute <strong>Macallan 15 Year Old<\/strong> in roasted hojicha tea, poured through an <strong>ice cream scoop infused with mint and blue pea flowers<\/strong>. The alcohol is thus reduced to <strong>8\u00b0<\/strong>, with no loss of aroma. The result? A <strong>light, aromatic beverage<\/strong> with a vegetal, springtime profile, ideal as an accompaniment to&#8230; a <strong>pre-dessert<\/strong>.   <\/p>\n\n<p>Created by <strong>David Bizet<\/strong> and <strong>Anne Courouble<\/strong>, this mouthful combines <strong>hazelnut praline<\/strong>, <strong>sparkling ribot milk<\/strong>, <strong>candied peas<\/strong> and <strong>fir buds<\/strong>.
