This is precisely the location of <strong>BRASS<\/strong>, a new address designed by <strong>Mathieu Bucher<\/strong> (River Caf\u00e9, Gallopin). Surrounded by his associates Franck Saliba, Fran\u00e7ois Dulsan and Thomas Fougerol, the entrepreneur has brought back to Saint-Germain a place that seems to have always existed, so much so does it embody the memory of the great French brasseries.  <\/p>\n\n<p>Under the leadership of chef <strong>Amine Boudali<\/strong>, a former member of the Murat family, BRASS is a nostalgic affair. <strong>Red leather banquettes<\/strong>, white tablecloths, meticulous service and a hushed atmosphere: everything here recalls the golden age of Parisian brasseries. Decorator <strong>Doroth\u00e9e Meilichzon<\/strong> has created a warm, woody interior, punctuated by American accents. From the large wooden bar to the coffered ceilings and mosaic floors, every detail contributes to recreating a timeless atmosphere.  <\/p>\n\n<h2 class=\"wp-block-heading has-text-align-center\">An experience between past and present<\/h2>\n\n<p>In summer, the terrace offers a lively setting for dining late into the night. In winter, the interior becomes a refuge, ideal for a cocktail at the bar or a meal in the back room, a veritable cabinet of curiosities. In keeping with the spirit of the neighborhood, BRASS also evokes memories of the jazz era: a red piano will soon welcome musicians, reviving the festive atmosphere of the brasseries of yesteryear.  <\/p>\n\n<h2 class=\"wp-block-heading has-text-align-center\">A very &#8220;French Touch&#8221; menu<\/h2>\n\n<p>In terms of cuisine, BRASS takes a <strong>classic French<\/strong> approach, executed with precision. There&#8217;s <strong>onion soup au gratin<\/strong> (\u20ac9), <strong>duck foie gras<\/strong> (\u20ac22) and <strong>bread tartine \u00e0 la moelle<\/strong> (\u20ac14). Among the main courses, <strong>fillet of beef au poivre<\/strong> (\u20ac33) and <strong>sausage au couteau pur\u00e9e<\/strong> (\u20ac19) will appeal to lovers of tradition, while <strong>sole goujonnettes with tartar sauce<\/strong> or <strong>sea bass tartar with cucumber and granny smith<\/strong> (\u20ac22) add a touch of summer freshness.  <\/p>\n\n<p>For dessert, the <strong>French toast brioche<\/strong> (\u20ac14) shines with its airy texture, while the<strong>Eton Mess with forest fruits<\/strong> (\u20ac12) ends the meal on a light note.
