A Japanese concept revisited with authenticity and creativity, signed by chef Hisanobu Shigeta. <\/strong><\/p>\n\n<p>After introducing Parisians to <strong>handroll<\/strong> with his DokiDoki address, <strong>Thomas Moreau<\/strong> continues his exploration of Japanese cuisine by tackling another classic: <strong>temaki<\/strong>. With <strong>Nobisan<\/strong>, located in the <strong>Haut-Marais<\/strong> district of Paris, he aims to shed light on this Tokyo specialty, which is still little known in France. <\/p>\n\n<p>The space, designed by <strong>Hypnos XP<\/strong> (also responsible for The French Bastards bakeries), has a minimalist aesthetic. On the first floor, a <strong>counter<\/strong> allows you to watch the food being prepared live, while upstairs, a more intimate atmosphere is created, ideal for small gatherings or group meals. <\/p>\n\n<h2 class=\"wp-block-heading has-text-align-center\">Temaki revisited<\/h2>\n\n<p>On the menu, temaki takes on a singular form. Gone is the classic seaweed cone filled with rice and raw fish: at <strong>Nobisan<\/strong>, it&#8217;s presented in a <strong>rectangular format<\/strong>, to be eaten with your hands full. This approach brings visual and culinary modernity, while preserving the essence of this Japanese specialty.  <\/p>\n\n<p>To sublimate this dish, Thomas Moreau called on chef <strong>Hisanobu &#8220;Nobu&#8221; Shigeta<\/strong>, who has worked at prestigious addresses such as the <strong>Jules Verne<\/strong> on the Eiffel Tower. Together, they offer <strong>top-of-the-range temaki<\/strong> made with exceptional products: crispy seaweed from a traditional Japanese house, <strong>melting toro tuna<\/strong>, salmon, quality sea bream and even <strong>caviar<\/strong>. <\/p>\n\n<h2 class=\"wp-block-heading has-text-align-center\">A balanced, refined menu<\/h2>\n\n<p>In addition to temaki, Nobisan also offers <strong>soba noodles<\/strong> and <strong>desserts by<\/strong> Japanese-trained pastry chef <strong>Toshiya Takatsuka<\/strong>. To accompany these creations, drinks are carefully selected: teas from the <strong>Jugetsudo<\/strong> house and <strong>sakes<\/strong> selected by the <strong>Maison du Sak\u00e9<\/strong>. The culinary experience is thus complete, combining Japanese rigor and contemporary openness.  <\/p>\n\n<h2 class=\"wp-block-heading has-text-align-center\">Nobisan, an address to watch in the Marais<\/h2>\n\n<p>With this project, <strong>Thomas Moreau<\/strong> confirms his role as an important player on the Paris culinary scene, capable of revisiting Japanese classics while remaining faithful to their spirit.
