With the arrival of chef Roudy Petersen, Vesper is reborn and imposes its refined Japanese signature in the heart of the Left Bank.<\/strong><\/p>\n\n

Just a stone’s throw from the \u00c9cole Militaire, Vesper has established itself as the new must-try Japanese restaurant in Paris<\/strong>. The sophisticated decor, designed by Studio Lazaro, combines noble materials: blond wood ceiling, tropical marble mosaic, Pierre Frey wallpaper, sculptural lighting… The d\u00e9cor sets the tone: elegant yet lively. <\/p>\n\n

Japanese cuisine combining refinement and creativity<\/h2>\n\n

At the helm of this revival is Roudy Petersen<\/strong>, a chef trained by Guy Savoy<\/strong> and Pierre Gagnaire<\/strong>, who has also worked at Zuma Europe<\/strong> and Catch in Abu Dhabi<\/strong>. At Vesper, he infuses contemporary Japanese cuisine with surgical precision, but always full of surprises. Crispy rice with<\/strong> tuna-salmon tartar duo<\/strong> or rock shrimp with yuzu<\/strong> show the chef’s mastery right from the start. <\/p>\n\n

Dishes to share follow on from one another with consistency: caramelized black cod<\/strong>, Iberian pork with yuzu kosho<\/strong>, or barbecued lamb chops<\/strong>, all served with vegetable accompaniments (miso eggplant, grilled broccolini…) that extend the taste experience just right.<\/p>\n\n

But Vesper isn’t just a restaurant. It’s also an exceptional cocktail bar<\/strong>, where each creation becomes a liquid tribute to Japan: Matcha Fizz<\/em>, Velours Nippon<\/em> and Rouge Geisha<\/em> blend mezcal, yuzu, hibiscus flower, Eminente rum and azuki syrup for unexpected sensory experiences. Vesper Garden<\/strong>, with gin, basil and ginger beer, evokes a Japanese garden revisited.<\/p>\n\n

A lively place from dinner to brunch<\/h2>\n\n

The large, leafy terrace, open from 5pm<\/em>, attracts an elegant local clientele for a drink or some sushi. Two atmospheres coexist: a bright main room and a more hushed back room. From November 12, 2025<\/em>, Vesper will be open for lunch<\/strong> and will soon be offering a Sunday brunch<\/strong>, ideal for prolonging Parisian weekends in style. <\/p>\n\n
