Among the numerous openings, <strong>six addresses<\/strong> stand out and deserve your attention this April.  <\/p>\n<h2>Fire in the heart of the plate: Calcifer and Faa\u00ef<\/h2>\n<p>Fire-cooking seems to be becoming a strong trend on the <a href=\"https:\/\/www.parisselectbook.com\/?p=216841\">Parisian gastronomic scene<\/a>. Two <strong>new restaurants<\/strong> embody this movement with brio. On the one hand, a French restaurant dedicated to the flame; on the other, a Thai address that honors the embers.  <\/p>\n<p>Calcifer <a href=\"https:\/\/www.parisselectbook.com\/?p=216856\">opened its doors<\/a> on <strong>April 1<\/strong> at <strong>41, rue Notre-Dame-de-Nazareth in the 3rd arrondissement<\/strong>. The address is entirely dedicated to wood-fired cooking. The cuisine is straightforward and precise, with each plate in dialogue with the flame.  <\/p>\n<p>The d\u00e9cor is warm and theatrical to prolong this sensory experience. The menu includes a crab souffl\u00e9 omelette with a spicy homemade sriracha sauce. Galician veal with morel mushrooms seduces meat lovers. For <a href=\"https:\/\/www.parisselectbook.com\/?p=216832\">dessert<\/a>, a fritter with orange, curry and green cardamom also goes on the barbecue.   <\/p>\n<blockquote><p>&#8220;Each plate dialogues with the flame, all in a warm, theatrical setting to prolong the experience.&#8221;<\/p><\/blockquote>\n<h3>Faa\u00ef: Bangkok&#8217;s fashionable ember<\/h3>\n<p>At Faa\u00ef, located at <strong>15, rue Trousseau in the 11th arrondissement<\/strong>, Thai cuisine takes over. After a soft-opening on <strong>March 26<\/strong>, the address continues to unveil itself this spring. The name itself means &#8220;fire&#8221; in Thai.  <\/p>\n<p>Here, cooking takes place on terracotta barbecues known as <strong>tao-than<\/strong>. This technique allows us to offer authentic Bangkok-style cuisine. So it&#8217;s another table that&#8217;s going to set the city alight with its unique flavors.  <\/p>\n<ul>\n<li>Calcifer: wood-fired cooking, French cuisine, 3rd arrondissement<\/li>\n<li>Faa\u00ef: Thai embers on tao-than, 11th arrondissement<\/li>\n<li>Echo Market: a new take on a cult brunch address, 2nd arrondissement<\/li>\n<li>Salto Bar: Iberian tapas by Diego Alary, 11th arrondissement<\/li>\n<li>Pepins: freshly-made sandwiches, 10th arrondissement<\/li>\n<\/ul>\n<h2>Reliable values that reinvent themselves: Echo Market and L&#8217;\u00c9cailler du Petit Chardon<\/h2>\n<p>Some addresses already well established in the hearts of Parisians are choosing to reinvent themselves. Echo, known for serving one of the best brunches in Paris, has announced the arrival of a brand new <strong>Echo Market<\/strong>. The original address at <strong>95, rue d&#8217;Aboukir in the 2nd arrondissement<\/strong> is renowned for its crispy rice bowl and memorable grilled cheese.  <\/p>\n<p>Although all the details are not yet known, this new variation is one of the most eagerly awaited <strong>new restaurants<\/strong>. Lovers of good healthy-cheeky combos will undoubtedly find what they&#8217;re looking for. The wait only increases the curiosity.  <\/p>\n<p>The Chardon and Petit Chardon families are joined by <strong>L&#8217;\u00c9cailler du Petit Chardon<\/strong>. These neighborhood bistros in the 10th arrondissement are appreciated for their warm ambience. Simple banquettes, no-frills decor and hearty dishes: the recipe works.  <\/p>\n<h3>A new iodized address in the 10th arrondissement<\/h3>\n<p>After two initial addresses in the same district, the family is expanding with an &#8220;\u00e9cailler&#8221; version. In April, the chic bistro atmosphere with seafood is back. Le Petit Chardon, at <strong>34, rue du Ch\u00e2teau d&#8217;Eau<\/strong>, remains open Monday to Sunday, from 12 to 3pm and from 6pm to midnight.  <\/p>\n<p>This move towards seafood meets the expectations of regulars. Simmered dishes, sauced meats and homemade desserts continue to feature on the menu. These <strong>new restaurants<\/strong> perpetuate a very Parisian bistro tradition.  <\/p>\n<h2>The Diego Alary phenomenon and the art of the sandwich at Pepins<\/h2>\n<p>On <strong>February 8<\/strong>, Diego Alary announced news that made his millions of followers sit up and take notice. TikTok&#8217;s most-followed French chef, who appeared on <strong>season 11 of Top Chef<\/strong>, is opening his very first restaurant in Paris. In the spring, he unveiled <strong>Salto Bar<\/strong>, a tapas bar at <strong>11, rue Camille Crespin du Gast in the 11th arrondissement<\/strong>.  <\/p>\n<p>Inspired by his roots, the chef focuses on Iberian cuisine in the heart of M\u00e9nilmontant. His cuisine is based on products, combining traditional dishes with creative recipes. His approach knows no culinary limits or boundaries.  <\/p>\n<p>On the rue du Faubourg Poissonni\u00e8re, <strong>Pepins<\/strong> is turning lunchtime upside down. The address, at <strong>28, rue du Faubourg Poissonni\u00e8re in the 10th arrondissement<\/strong>, serves well-mastered sandwiches. Behind the project are Tanguy and Sully, who worked together at BBT.  <\/p>\n<p>Their shared passion for sandwiches led them to create this table. The sandwiches are fresh, made to order, with quality sourced ingredients. On the menu: a Panino with stracciatella, mortadella and truffled olive oil; a Poule Pork with poached eggs and bacon; a classic Parigot ham and butter. A sandwich of the day changes according to arrivals and the whims of the two chefs.   <\/p>\n<p>These <strong>new<\/strong> Parisian <strong>restaurants<\/strong> reflect strong trends: the return to fire, the demand for products and the authenticity of flavors. Whether you&#8217;re a fan of grilled meat, seafood or simple sandwiches, the spring of 2026 offers some great restaurants to try.
