On Tuesday April 21, 2026, Time Out’s editorial team presented its annual awards at a ceremony at the Parc des Princes<\/a>. Among the 14 awards<\/strong>, the one for the best aperitif in Paris<\/strong> particularly caught the eye. A brand-new address in the Marais district won the coveted gold medal. <\/p>\n

Le Coyote: the queer saloon named best aperitif in Paris<\/h2>\n

On stage, Marine Gora<\/strong> received her award, accompanied by her team of cowboy boots. After years at the Gramme 3<\/strong> caf\u00e9-cantine<\/a> on rue des Archives, the chef reinvented herself as a cowgirl. Within the same walls, she opened Le Coyote<\/strong>, the new queer saloon in the Marais. <\/p>\n

Opened last autumn, it operates as a coffee shop during the day. Then, after dark, it transforms into a cosy wine bar<\/a>. The minimalist Western d\u00e9cor is immediately appealing: swinging doors, fringed lampshades, horseshoes here and there. <\/p>\n

The playlist oscillates between pop, indie rock and country. It’s easy to see why this place was voted best aperitif in Paris<\/a> this year. <\/p>\n

Inspiration from Montreal<\/h3>\n

Marine Gora confided to Le Monde that she drew her inspiration from the Montreal dive bar Spaghetti Western. She discovered the place last summer during a trip. The chef then reappropriated the masculine codes of the country bar. <\/p>\n
