Here, chocolate is prepared right at the counter. Ganaches, fruit confits, trèfles sauciers or bars with innovative textures are made to order. Each creation becomes a stage for haute gastronomie. It’s a dialogue between chocolatier and customer, just like in a Michelin-starred kitchen.
Ephemeral creations rub shoulders with the great classics. They are always designed to express the right taste, with an ultra-technical approach that respects the ingredients. White sugar, for example, is replaced by a natural extract of birch bark. This reduces the glycemic index to 7, compared with 70 for sucrose, without compromising on flavour.
