Taittinger opens its gourmet restaurant in Reims… and turns tasting codes upside down
In Reims, Maison Taittinger unveils its very first gastronomic table.
Located in the heart of the historic Place Saint-Nicaise, the Table Polychrome redefines the art of food and champagne pairing through a new and evolving concept.
A culinary experience in motion
Designed as a natural extension of the visit to the cellars and concept store, the Table Polychrome does more than simply serve a menu. It showcases the exploration of flavors and the finesse of blending, the pillar of the Taittinger identity.
Charles Coulombeau, Michelin-starred chef and winner of the Prix International Taittinger 2020, has designed each dish to resonate with a Taittinger cuvée. The twist? Diners play an active role in the experience, thanks to a selection of condiments they can add as they wish. A play of textures and aromas, on the menu: Summer Aubergine, Duck pak choï & coriander or Barbue, cauliflower & jasmine.
Possible pairings? Miso-kumquat sauce, smoked-mint yoghurt, Earl Grey mustard or roasted pistachios. A made-to-measure gustatory score that renews the classic approach to gourmet dining.
A lively, seasonal concept
Composed of three or four courses, the menus evolve with the seasons. And that’s not all: every year, Table Polychrome will change culinary direction, welcoming a new chef.
Complementing the restaurant, the Bar Polychrome offers tastings of the House’s cuvées, solo or paired with gourmet “palettes”, not forgetting afternoon teas for a lighter break.
