Jade Genin’s granités-neige: summer will be frosty and green
What if summer’s icy treat came not from a cone, but from a cloud? For the 2025 summer season, chef Jade Genin, already renowned for her chocolates d’auteur, proposes a creation that goes against the grain: granités-neige, frosted desserts inspired by Japanese kakigori and Korean bingsu, but reinvented with extreme refinement and a committed bias.
A unique texture, worked to the minute
Grated up to the minute, these granités evoke ultra-fine, ephemeral, melting snow, a far cry from classic sorbets or over-sweetened ice creams. With no syrup, flavoring or white sugar, the formula makes the radical choice of raw purity: fresh, seasonal fruit and unique technical know-how, with no stabilizers or additives.
A bold choice in the world of artisanal ice cream, where technique is often hidden behind layers of fat or sugar. Here, only the raw material speaks, and it expresses itself with stunning sensory clarity.
Gourmet, plant-based compositions
The 2025 collection offers compositions that are both legible and subtle, with pairings conceived as veritable desserts:
- Raspberry & lemon meringue, for a tangy freshness with an air of frosted pavlova
- Mango & passion fruit, sunny and tropical
- Intense chocolate mousse, for lovers of cocoa sensations, even in midsummer
- Bronte pistachio, raw and creamy
- Tahitian vanilla, smooth and airy
Each granita becomes a complete experience, playing on temperature, texture and purity of taste.
Why not try glazed vegetables?
This season’s big news: Jade Genin dares to introduce vegetables to the world of frosted desserts. Two creations are already surprising and seducing curious palates: cucumber, for a thirst-quenching lightness, and bell pepper, with unexpected sweet notes. A masterful plant-based incursion that reflects an innovative vision of frozen patisserie.
