A star chef and an exceptional café open under the Galeries Lafayette dome

When the art of coffee meets haute patisserie, Paris gains a new address not to be missed. Since June 2025, Galeries Lafayette Paris Haussmann has been home to an original coffee shop, the fruit of a collaboration between François Daubinet and Coutume Café.

An alliance of high standards and creativity

Named François Daubinet chez Coutume, this 2nd-floor venue under the Coupole brings together two worlds driven by product quality, respect for origins and uncompromising craftsmanship.

On the coffee side, Coutume founder Tom Clark offers a rigorous selection of specialty coffees from Colombia, Ethiopia and Guatemala. Roasted in the Paris region, they are extracted on demand by baristas trained to reveal the aromatic richness of each terroir. The beans are also available for sale.

A pastry by an author, designed to enhance the flavours of coffee

François Daubinet, who has worked in some of Paris’s finest restaurants (Plaza Athénée, Crillon, Fauchon), has created an exclusive sweet menu, designed to interact with the coffees. Not-to-be-missed creations include:

  • L’Orchidée: a subtle dessert with Tahitian vanilla and white coffee
  • L’Origine: a tribute to the cocoa-coffee-vanilla triplet
  • A Gianduja tart, cakes, cookies, and a pastry drink that changes with the seasons.

A savoury menu (salads and sandwiches) completes the menu for on-the-go lunches in elegant surroundings.

A place designed as a tasting laboratory

Designed by Ouvrage Paris, the space combines raw materials and warm design. The 40-odd seats are ideal for a gourmet break or a meeting between insiders.
