The“œuf cocotte aux lardons ” is a must, while the “île flottante aux pralines roses ” adds a sweet, nostalgic touch at the end of the meal. Each dish respects the fundamentals of Lyonnais cuisine, while at the same time offering a modern, masterful interpretation.
