The Macallan at the Peninsula Paris: whisky tasting reinvented at L’Oiseau Blanc
Scottish distillery The Macallan has teamed up with L’Oiseau Blanc for a new experience in Paris, rethinking the art of whisky tasting.
Located at the top of the Peninsula Paris, L’Oiseau Blanc, a double Michelin-starred gourmet restaurant, is the setting for an original collaboration between haute cuisine and exceptional whisky. For the past few weeks, the restaurant has been offering a six-part tasting menu designed in collaboration with The Macallan, the world’s leading single malt whisky house.
At the heart of this experience is La Perle de Speyside, an unexpected culinary ritual in which whisky mingles with Japanese tea in a refined setting, far removed from the clichés of a hushed end to a meal. This partnership between a Parisian palace and a Scottish distillery questions the role of whisky at the table, opening it up to a more curious and less codified clientele.
A daring ritual, far from fixed traditions
The idea is simple but demanding: dilute Macallan 15 Year Old in roasted hojicha tea, poured through an ice cream scoop infused with mint and blue pea flowers. The alcohol is thus reduced to 8°, with no loss of aroma. The result? A light, aromatic beverage with a vegetal, springtime profile, ideal as an accompaniment to… a pre-dessert.
Created by David Bizet and Anne Courouble, this mouthful combines hazelnut praline, sparkling ribot milk, candied peas and fir buds. A combination as audacious as it is elegant, it confirms the ambition of the place: to redefine the relationship with tasting.
Paris, capital of the new generation of whisky?
This type of proposal, still rare in Parisian establishments, illustrates an emerging trend: the entry of whisky into the world of high-end gastronomy. This partnership between The Macallan and the Peninsula Paris is in line with this desire to reinvent codes, while respecting the DNA of both houses.
To extend the experience, a selection of signature cocktails based on Double Cask 12 Years Old is also available on The Golden Hour rooftop, with a breathtaking view of the Eiffel Tower.
