Pierre Hermé brings back-to-school crunch with viennoiserie pop-up at Galeries Lafayette Le Gourmet
From September 2 to October 2, 2025, Pierre Hermé Paris is setting up a unique pop-up in front of Galeries Lafayette Le Gourmet. On the program: reinvented viennoiseries, between tradition and audacity, that celebrate the art of puff pastry like never before.
In Paris, every autumn brings its share of gourmet novelties. This year, Pierre Hermé, nicknamed the Picasso of patisserie, has come to delight sweet tooths with a Pop-Up dedicated to viennoiserie. Located in front of Galeries Lafayette Le Gourmet, this ephemeral space showcases unique creations, conceived as true sensory experiences.
The art of viennoiserie according to Pierre Hermé
For several decades, Pierre Hermé has imposed his style: daring unexpected combinations of flavors, sublimating classics and transforming tasting into a moment of emotion. For the 2025 season, he applies this approach to the world of viennoiserie, often confined to traditional recipes.
The result? Crunchy, melt-in-your-mouth, intensely flavored creations that revisit the icons of French bakery while adding a singular touch.

Le Croissant Montebello
This croissant revisits one of the House’s signature flavors: the combination of roasted pistachio and tart raspberry. The contrast between light bitterness and fruity freshness surprises and seduces from the very first bite(€3.80 – exclusive to Galeries Lafayette Le Gourmet).
Le Pain au chocolat Mogador
A chocolate bread like no other, where caramelized homemade milk chocolate meets passion fruit. Both crunchy and melting, it unfurls intense, tangy notes, for an unforgettable result(€4).
Le Palmier Infiniment Vanille
Here, the viennoiserie is adorned with three exceptional vanillas – Madagascar, Tahiti and Mexico. Beneath an apparent simplicity, this palm tree reveals crisp, buttery layers with a unique aromatic depth(€4 – Galeries Lafayette Le Gourmet exclusive).
The Isfahan Crescent
Pierre Hermé’s absolute icon,Ispahan, is now available in a croissant version: rose, lychee and raspberry make up a floral and fruity alliance, already a must for fans of the pastry chef(€3.80).

- Kouign Amann: caramelized and melting, a tribute to butter in all its splendor(€4).
- Chausson aux pommes: a compote combining the sweetness of Boskoop apples and the acidity of Granny Smith apples(€3.50).
