Nobisan: the new temple of temaki in the Marais district
Restaurateur Thomas Moreau opens Nobisan, a new Parisian address dedicated to temaki, right in the heart of the Haut-Marais district. A Japanese concept revisited with authenticity and creativity, signed by chef Hisanobu Shigeta.
After introducing Parisians to handroll with his DokiDoki address, Thomas Moreau continues his exploration of Japanese cuisine by tackling another classic: temaki. With Nobisan, located in the Haut-Marais district of Paris, he aims to shed light on this Tokyo specialty, which is still little known in France.
The space, designed by Hypnos XP (also responsible for The French Bastards bakeries), has a minimalist aesthetic. On the first floor, a counter allows you to watch the food being prepared live, while upstairs, a more intimate atmosphere is created, ideal for small gatherings or group meals.
Temaki revisited
On the menu, temaki takes on a singular form. Gone is the classic seaweed cone filled with rice and raw fish: at Nobisan, it’s presented in a rectangular format, to be eaten with your hands full. This approach brings visual and culinary modernity, while preserving the essence of this Japanese specialty.
To sublimate this dish, Thomas Moreau called on chef Hisanobu “Nobu” Shigeta, who has worked at prestigious addresses such as the Jules Verne on the Eiffel Tower. Together, they offer top-of-the-range temaki made with exceptional products: crispy seaweed from a traditional Japanese house, melting toro tuna, salmon, quality sea bream and even caviar.
A balanced, refined menu
In addition to temaki, Nobisan also offers soba noodles and desserts by Japanese-trained pastry chef Toshiya Takatsuka. To accompany these creations, drinks are carefully selected: teas from the Jugetsudo house and sakes selected by the Maison du Saké. The culinary experience is thus complete, combining Japanese rigor and contemporary openness.
Nobisan, an address to watch in the Marais
With this project, Thomas Moreau confirms his role as an important player on the Paris culinary scene, capable of revisiting Japanese classics while remaining faithful to their spirit. Nobisan enriches the offering in the Marais, a district already renowned for its gastronomic diversity, and could well become a new benchmark for lovers of Japanese cuisine in Paris.
