From Perugia to Paris

Originally from Perugia, Italy, Stefano Stafie grew up in an environment where cooking was an everyday art . “At home, everything was homemade. My parents cooked with products from the hunt and the vegetable garden,” he confides . A childhood marked by authenticity and respect for the land, which nourished his passion for taste. Trained at an early age at the local hotel school, he moved on to Paris and cut his teeth at the Morice Venice Bar, a renowned Venetian address in the capital.

His career quickly took on an international dimension. He perfected his technique with some of the greatest: Thomas Keller at the three-starred Per Se restaurant in New York, then Alain Taudon at L’Orangerie du George V, where he became sous-chef. These experiences forged his mastery of French gastronomy and his attention to detail, which he now combines with his Italian roots.

Mediterranean cuisine reinvented

At the Hôtel de Sers restaurant, Stefano Stafie offers sunny, generous and contemporary Mediterranean cuisine. The menu, tightly focused and precise, is structured around three starters, five main courses and three desserts, complemented by a few daily suggestions. Linguine with langoustine bisque is a perfect example of his approach: an apparently simple dish, but whose intense, silky sauce reveals all the finesse of the product. As for desserts, Stefano Stafie explores new textures and flavors, even playing with umami. A trompe-l’œil tiramisu, with coffee jelly pearls and a mascarpone-cream cheese center, illustrates his creativity and taste for contrasts.

The Hôtel de Sers, a singular residence

Reinterpreted by architect Pascal Allaman, the hotel combines memory and modernity. Its 43 rooms and 9 suites cultivate an intimate, refined luxury with an Art Deco spirit, and some boast exceptional views of the Eiffel Tower.
