Vesper restaurant reinvents itself under the direction of chef Roudy Petersen

In the 7ᵉ arrondissement of Paris, the Vesper restaurant is enjoying a new lease of life. At its helm, chef Roudy Petersen imposes his style and vision, blending precision, emotion and international influences. Having trained in some of the world’s top establishments (Guy Savoy, Pierre Gagnaire) and run kitchens in Abu Dhabi and Doha, he makes his Paris debut as Executive Chef of Vesper, transforming the address into a culinary phenomenon to watch.

Fusion cuisine between France and Japan

Under the direction of Roudy Petersen, Vesper’s menu takes on a new dimension: Franco-Japanese fusion is reinvented with finesse. Emblematic dishes such as black cod with miso, barbecued lamb chops with turnips marinated in yuzu-togarashi, or plates of Hamachi, Tuna or Obsiblue shrimp sashimi are featured. The menu also features creative makis, snacks to share (gyoza, rock shrimp with yuzu, crispy chicken with yuzu-kosho) and signature dishes like Crying Tiger or Asian beef salad. These creations demonstrate the balance between technical expertise, audacity and respect for the products.
Brunch is also on the menu on Sundays, to extend the weekend in a relaxed, gourmet atmosphere.

A launch evening under the banner of outreach

To celebrate this renewal, chef Roudy Petersen and Fitz Group president Guillaume Benard invited a selection of prestigious guests to an inaugural evening. Among them were actress Nadia Farès, writer Amanda Sthers, singer Paolo Ravley, designer Axel Huynh, and personalities from the world of fashion and luxury. Ambassadors of elegance and creativity, these guests were able to discover the new menu, share in the chef’s creations and feel the cosmopolitan atmosphere that accompanies this renewal. It is in this atmosphere where Paris meets the world that Vesper asserts its positioning: a contemporary, vibrant address, anchored in the spirit of modern Izakaya.
