This fall, the restaurant unveils the Ridgway menu, a vibrant tribute to the great outdoors of the American West. Conceived as a true celebration of sharing, it warms hearts with dishes that are both rustic and refined. Each plate recounts the generosity of ranch meals, the spirit of freedom and the taste of the real thing.
The opening
Flagship dishes have become icons: the Canyon Burger, generous and melt-in-your-mouth, blends caramelized bacon with maple syrup, aged cheddar and candied jalapeño peppers. The spectacular Beef Tomahawk, rubbed with coffee and chili, is best enjoyed shared, while the Blackened Steelhead Trout seduces with its finesse and lemony notes.
Sweets and cocktails under the stars
As for desserts, it’s impossible to resist the Rocky Mountain Sundae – oat milk ice cream, cowboy cookie flakes and warm bourbon caramel sauce. To prolong the experience, the Code of the West, a signature rye-based cocktail, offers the perfect blend of intensity and elegance.
