Joyau des Pins: Anne Coruble’s magical Yule Log at the Peninsula Paris

As the festive season approaches, the Peninsula Paris invites guests on a gourmet voyage of discovery with the “Joyau des Pins” log. Designed by Pastry Chef Anne Coruble, this spectacular creation is inspired by the thirteen Christmas desserts, a centuries-old Provençal tradition, and evokes a walk in a winter forest. Carefully sculpted, every detail recalls the beauty of the undergrowth, from the pine cones to the sparkling lights, transforming the Christmas table into a veritable fairytale landscape.

A gourmet, architectural composition

Joyau des Pins” is composed of thirteen successive layers, each designed to create a harmony of textures and flavors. The 60% Peruvian milk chocolate shell envelops a cedar-wood roasted rice mousse, pine nut praline and pine honey dulce de leche, enriched with a Japanese cookie and glutinous rice cream. The base is revealed as a tablet to share, with a puffed rice and pine nut crunch, a pine nut-filled praline and a vanilla semi-salt caramel, for a generous and interactive tasting experience. La Cheffe infuses this creation with woody, milky and resinous fragrances, reminiscent of winter and childhood, offering a complete sensory experience.

Christmas tea time at the Peninsula

To prolong the magic, the Peninsula Paris also offers tea time in the refined setting of the Lobby. Fragrant hot chocolates, rare teas and fine pastries make Christmas tea time at the Peninsula a precious moment. The farandole of original creations enchants the eyes and taste buds: marbled praline speculoos bar, spiced nonette flower and orange marmalade, lemon meringue pie, mochi pignon, rice and yoghurt, and the frosted Cinnamon Roll with cinnamon cassia follow one another with elegance. Each bite, accompanied by a hot drink, is savored in an intimate, light-filled atmosphere, transforming tasting into a veritable Christmas ritual. This gourmet pause, where textures and flavors are perfectly matched, offers a warm and convivial moment to share with family and friends.

The “Joyau des Rois” galette: elegance and tradition

For Epiphany, Anne Coruble proposes the “Joyau des Rois” galette, designed for eight guests. Its flaky Viennese pastry, both crisp and soft, encloses a generous frangipane combining toasted almonds, fresh almonds and delicate notes of orange blossom. The curved twists on the surface modernize the classic appearance, while a unique bean invites travel and discovery, to extend the magic of the festive season beyond Christmas.
