L’Adage à la rose: the fairytale yule log from Café de la Paix and Maison Repetto for Christmas 2025

For the festive season, Café de la Paix unveils an exceptional creation in collaboration with Repetto: L’Adage à la rose, a spectacular log inspired by the ballet Sleeping Beauty. This couture dessert pays tribute to their long-time neighbor, the Opéra Garnier, which celebrates its 150th anniversary this year. Halfway between haute pâtisserie and a tribute to the world of dance, this log brings together two icons of French refinement, in a poetic setting worthy of a real ballet.

A chewy tutu to celebrate the art of gesture

Café de la Paix, a Parisian institution since 1862, and Repetto, an emblematic dance house founded in 1947, combine their expertise to reinvent the Christmas ballet. Under the snowflakes, as if backstage at an opera, the log appears as a sculpted pastry tutu, whose silhouette evokes the emblematic dress of Aurore, heroine of the ballet Sleeping Beauty.
Pastry chef Simon Letaillieur drew his inspiration directly from the “Adage à la rose”, a cult scene in which the princess dances with a rose in her hand, accompanied by her suitors. In this creation, tulle and silk give way to sponge cake, mousse and crunch – but retain all the grace of the original.

A poetic immersion imagined with Repetto

To enhance this collaboration, the InterContinental Paris – Le Grand and the Café de la Paix are transformed into a veritable ballet setting: majestic fir trees, refined details and nods to dance make up an enchanting journey.
The log is sculpted in a white chocolate case and is enjoyed in four movements, all inspired by choreographic vocabulary:

• tangerine-vanilla mousse, light as an entrechat ;
• rosewater sponge cake, as delicate as an arabesque ;
• praline-pistachio crunch, for the bite of a grand jeté ;
• candied mandarin insert and creamy milk chocolate, a vibrant finale.
  An elegant, well-balanced composition, designed like an ephemeral jewel.

L’Adage à la rose is available from December 8 to 25, 2025, as a limited edition directly from the Café de la Paix. As with all gala premieres, places are limited, a detail emphasized in the official press release. In the image of Repetto and the InterContinental Paris, Le Grand, this log embodies timeless French savoir-faire, blending elegance, emotion and artisanal excellence.
