Throughout the month of December, Le Céladon pays tribute to the spirit of the holidays with evening suggestions by Chef Grégory Gbiorczyk, at the crossroads of tradition and creation. Each dish tells the story of winter with delicacy: truffled poultry, creamy root vegetable velouté, pearly fish with fragrant beurre blanc, or gourmet desserts with notes of citrus and spices.

Far from a fixed menu, these suggestions evolve, guided by the season, the market and the inspiration of the day. What never changes is the quality of the produce, the rigor of the technique and the French attention to detail. A refined score, discreetly orchestrated by the wait staff, whose natural elegance is reminiscent of the great houses of yesteryear.

On Wednesday December 31, the year comes to a close with an exclusive New Year’s Eve menu, conceived as an ode to pleasure. Each dish is a celebration: langoustine, caviar, game, grand cru chocolate… all ingredients treated with respect and subtlety. One leader, one vision

At the helm, Grégory Gbiorczyk breathes new life into Céladon. A former chef at Christian Constant’s Violons d’Ingres, then Executive Chef at the Cercle de l’Union Interalliée for over 13 years, he combines classicism and audacity with precision. Trained in pastry-making, he never forgets sweetness, even in savory dishes. In 2023, he will head up the kitchens at Le Molitor Paris, before making his mark at Le Céladon.
His vision? Contemporary French cuisine, respectful of the seasons, open to innovation without ever denying its roots. Each dish is constructed as a conversation between terroir, technique and pleasure.
