Sturia IGP Caviar d’Aquitaine caviar is produced in Nouvelle-Aquitaine, the historic birthplace of sturgeon in France. The “Caviar d’Aquitaine” PGI label, recognized by the European Union and validated by INAO, guarantees a precise origin and controlled production from “egg to egg”.
Sturia controls every stage: low-density breeding, reasoned feeding largely from human food co-products or sustainable fisheries, absence of GMOs, antibiotics and colorants. Grains are collected, processed on site within four hours, then meticulously sorted by hand, starting from a minimum size of 2.5 mm.
