For New Year’s Eve on December 31, 2025, Derrière has imagined a menu that unfolds the evening like a lovely festive film. It all begins with a glass of champagne, accompanied by parmesan gougères, turmeric wafers and a gourmet bouchée featuring hazelnuts and medjoul dates. Starters feature seafood and winter flavors: a marine jelly combining cauliflower, razor clams, Giol mussels, gray shrimp, nori seaweed and revisited mimosa egg; a scallop carpaccio with Guérande fleur de sel accompanied by a parsnip velouté with clementine juice and puntarella; or a velouté of truffled Jerusalem artichokes, spinach shoots, poached egg and smoked milk foam, as comforting as it is refined.

The dishes continue this gourmet ballet: heart of semi-salted cod poached in olive oil with celeriac, small mushrooms and sea urchin bisque; truffled veal blanquette with baby onions, sand carrots, turnips and basmati rice pilaf; heart of beef fillet with Sarawak pepper served with green cabbage fondue, duck foie gras sauce and semi-salted mashed potatoes; or truffle fusilli on leek fondue.

Sweet treats include a parfait glacé with Grand Marnier and citrus marmalade, a crème de marron with blackcurrant sorbet and muscovado tuile, or a Caraïbe chocolate tart for cocoa lovers.

Two services to organize your New Year’s Eve party

So that everyone can organize their New Year’s Eve party at their own pace, Derrière offers two services: the first at 7pm or 7:30pm, with a menu at €100 per person, ideal for those wishing to continue the evening elsewhere in the Marais.

A second service is available from 10pm, at a cost of €120 per person, so you can ring in the New Year in the restaurant’s own atmosphere. In all cases, reservations are essential, as the address is very popular on December 31st. One thing’s for sure: for a warm, gourmet and truly lively New Year’s Eve, Derrière is one of the finest options in Paris.
