For December 31st, Chef Damien Gomes has created a subtle seven-course menu. Amuse-bouches include langoustine and caviar tartare, golden veal sweetbread, pearly scallops, filet de biche with truffles… Around the tables, candles cast a golden glow, goblets tinkle and the Eiffel Tower sparkles in the distance. The atmosphere is hushed, joyful, almost suspended. It’s a Parisian New Year’s Eve, all elegance and no ostentation.

Inspired by Tchaikovsky’s famous ballet, this pastry creation is part of a rich cultural heritage. With the “Nutcracker” log, the Sofitel Paris Baltimore Tour Eiffel pays tribute to one of its first guests, the legendary Lord Baltimore, a London businessman who loved to travel between Paris, London and New York in the Victorian era.
