Starters include an Emerald Coast scallop carpaccio, enhanced by Chioggia beet, blackcurrant coulis and crispy millet, or a perfect egg with purple cauliflower purée, Piedmont hazelnuts and verjuice grapes. Elegant compositions, where the balance of flavors and the precision of cooking reveal all the chef’s savoir-faire.
For the main course, diners can choose between steamed cod, raspberry lacquered, served with a Cévennes sweet onion soubise and a pink berry daikon emulsion, or a quasi de veau confit, accompanied by a beet and kumquat velouté and a Jura wine “sous-bois” blend. Two proposals that perfectly illustrate the company’s philosophy: clear, elegant, but never demonstrative gastronomy.
