The journey begins with a series of delicate canapés. Buckwheat cracker with smoked eel and fennel, chawanmushi with smoked broth, shiitake and watercress, then pressed mackerel sushi with cider vinegar and shiso jangaji.

Starters include sea bream tartare with sweet Korean spices, lemon caviar and Corsican pomelo, followed by langoustines in fine kombu jelly with Osciètre caviar, soy cream, candied yuzu and Granville cockles.

The main courses continue this dialogue between land and sea, with roasted monkfish with kombu jam, roasted salsify with sake and yuzu sauce, then a rack of veal from the Basque region with Richerenche black truffle, served with truffled celery purée and celery voile.

For dessert, a praline surprise combining tamarind caramel, chocolate ice cream and Madagascar vanilla cream. The mignardises extend the pleasure with Piedmont hazelnut croquines, pear and Buddha hand fruit pastes, and dark Peruvian chocolate truffles with chestnut honey.

For Valentine’s Day, the gastronomic restaurant of the Hôtel Plaza Athénée joins forces with the Baccarat House for an exclusive evening on Saturday February 14, 2026. A prestigious encounter between haute gastronomy, crystal and the art of living.

More than a dinner, this evening is a total immersive experience. The chefs of the Hôtel Plaza Athénée have devised a five-part menu designed as a dialogue between flavors and the brilliance of crystal. Guests will be able to rediscover the house’s emblematic classics, such as brioche Marie Antoinette with caviar or langoustine à la parisienne, as well as new creations created especially for the event.

To enhance the tasting experience, the tables are adorned with Baccarat creations. Harcourt Louis Philippe glass rubs shoulders with contemporary pieces such as the Harcourt Eve flute, in a subtle interplay between heritage and modernity. For Valentine’s Day, the Mandarin Oriental Paris is offering a series of experiences designed as genuine sensory interludes, combining gastronomy, sweet treats and well-being.

Dinner at Camélia
On February 14, Chef Nina Haradji created a six-course tasting menu. The journey begins with an oyster with tagetes and ginger glaze, followed by a crab ravioli in a tangy broth with lovage oil. Exceptional products follow with scallops contised with truffle and Jerusalem artichoke, then fillet of sole with cauliflower and caviar.

The main course pays tribute to the flavors of the undergrowth with a roast pigeon with mead and puffed buckwheat. The tasting concludes with La Rose, a dessert combining rose, raspberry and lychee.

From February 1 to 28, the palace extends the celebration with a snack imagined by Consultant Pastry Chef Julien Dugourd.
