From May 2025, the two sunny spots are going into version 2.0 under the impetus of Marion Flipo, creative chef-in-residence. An exclusive menu, conceived as an ode to gourmet naturalness, reinvents West Coast classics by injecting technique, poetry and nutritional awareness.

Trained all over the world, Marion Flipo has an instinctive, sensory approach to cooking. At The Cali Sisters, she has signed six new creations that shake up the codes of Californian brunch without ever betraying them. Each plate is a balancing act: between acidity and sweetness, crunchy materials and creamy textures, plant-based ingredients and assertive pleasure.
Among the nuggets of this 2.0 edition, the Mimosa Eggs with hazelnut-miso cream, topped with crunchy salted granola, create a perfectly measured surprise on the palate. The Zucchini Salad, a delicate explosion of roasted zucchini, lemon tahini yogurt and pomegranate, seduces with its aesthetics as much as its freshness. And for those looking for a dish that’s complete but not heavy, the Falafel Healthy Bowl mixes quinoa, snow peas, cottage cheese and lively herbs in a composition that’s both nourishing and light.
Boldly rethinking brunch
But where Marion Flipo excels is in her ability to revisit the codes of the new-age brunch. Her signature dish, My Perfect Kind of Plate, is a masterful reinterpretation of the hearty breakfast: cheddar-ciboulette scone, scrambled eggs, roasted tomatoes and avocado come together in a plate that’s generous, structured and never heavy. All in a feel-good spirit that remains true to The Cali Sisters’ DNA.
And the desserts? Stunning.
It’s impossible to leave the table without tasting his signature desserts, which combine childhood reminiscence with an eye for detail. Special mention goes to the Strawberry Vacherin, where meringue blends with homemade vanilla ice cream and an invigorating strawberry coulis. Another favorite is the Rhubarb Almond Tart, combining poached fruit, raw cream and shortcrust pastry gilded to the millimeter.
