It all began with a childhood memory. It’s of a family vegetable garden where, as a child, Grégory Garimbay observed natural cycles, colors and scents. This sensory imprint would follow him to the heart of Saint James Paris, a confidential address nestled in Place Adenauer, a stone’s throw from the Bois de Boulogne.

Now a Michelin-starred restaurant (with a green star) with three Ecotable labels, Bellefeuille has become a showcase for a resolutely plant-based and committed cuisine. There’s no posturing here, just tangible sincerity on every plate.

Le Clos de Nonville, a living spring

Every month, the chef travels to Clos de Nonville, a 54-hectare estate in the Paris region, where two hectares are dedicated to permaculture. It’s here that he draws his inspiration, like returning to a family home. Artichokes, peas, morels, Nice lemons: the menu evolves with the harvest, reflecting a true connection to nature.

The products, delivered by electric vehicle, reduce the carbon footprint and guarantee absolute freshness. All this is expressed in tableware by Élisabeth Monroy, a poetic extension of this sensitive approach.
