In PleinCœur, to be published on October 4, 2024 by Éditions de La Martinière, Maxime Frédéric unveils a work that transcends the simple framework of a cookbook. More than just a pastry chef, he becomes a transmitter of memory and know-how. Through 60 recipes and immersive reports, he links the earth to the plate, gestures to origins.

A pastry born from life

A native of Normandy, Maxime Frédéric forged his career between his family’s farm and the finest pastry houses, including Cheval Blanc Paris and Café Louis Vuitton. With PleinCœur, he pays tribute to what precedes pastry creation: the product, its season, its artisan. Eggs, flour, honey, rhubarb, hazelnuts, herbs… each ingredient becomes a character in its own right.

Going against the grain of ephemeral trends, Frédéric’s patisserie is rooted in living, local, respected agriculture. He evokes the texture of raw milk, the smell of freshly ground buckwheat, the look of a beekeeper who tastes his honey like a wine. It’s not nostalgia, but a modern manifesto.

60 recipes that tell the story

Douillon normand, galette pomme, vacherin fraises des bois, tourte de seigle, pain au chocolat… revisited classics converse with childhood memories. Each recipe is contextualized by a photographic report by Nicolas Ceroni, paying homage to those without whom pastry would be no more than a backdrop without substance.

PleinCœur, soon to have a Paris address too

The world of this book doesn’t stop at the pages: PleinCœur is also the name of the boutique Maxime Frédéric will soon be opening in Paris. True to his vision, it will bring together producers, taste and gesture in a place that is both contemporary and earthy.
