Panurge: a Rabelaisian feast on the Sentier

A new gourmet address in Paris, Panurge resurrects the spirit of Rabelais with generous plates and modern bourgeois cuisine, inspired and uninhibited.
It’s one of the most exciting restaurants of the new academic year. Nestled on rue du Sentier, Panurge is just a stone’s throw from the Comédie-Française, in a nod to culture and literature. At the helm? Jason Gouzy, already noted for his sharp concepts, here accompanied by chef Tomoyuki Uchida. Together, they explore bourgeois cuisine, that of big appetites and generous dishes, but with contemporary precision and well-dosed Japanese influences.
Elegant decor for a stylish feast
The world of Panurge is carefully designed: wood panelling, midnight-blue velvet, tablecloths, antique crockery… A warm yet sophisticated place, halfway between a literary bistro and a bourgeois salon. An atmosphere that evokes Rabelaisian generosity without falling into caricature.
A menu combining French tradition and Japanese twist
On the plate, there’s an avalanche of dishes to share (or not): langoustines with madras curry (€23) sit alongside an astonishing Shio-Koji veal tongue (€17), while the vegetal vol-au-vent with mushrooms and runny egg (€29) is one of the best dishes on the menu. Special mention goes to the bouillabaisse revisited (€36), tasty and well-balanced, as well as the ultra-melting beef au poivre, accompanied by a potato millefeuille (€39).
The desserts are just as sophisticated: an ultra-regressive rice pudding spiced with salted butter caramel (€12) and a peach Melba infused with jasmine tea (€14) that closes the meal on a fresh, floral note.

In a neighborhood often shunned for its gastronomic options, Panurge succeeds in establishing itself as a generous, refined and inventive table. A perfect address for lovers of great, unpretentious cuisine. You’ll leave feeling satisfied, but above all conquered.
