BRASS: the brasserie that awakens the soul of Saint-Germain-des-Prés
Opened last May on boulevard Saint-Germain, BRASS pays homage to the traditional Parisian brasserie, with a contemporary twist and generous cuisine.
Back in 1978, Georges Perec described the Carrefour Mabillon as the quintessence of Paris. This is precisely the location of BRASS, a new address designed by Mathieu Bucher (River Café, Gallopin). Surrounded by his associates Franck Saliba, François Dulsan and Thomas Fougerol, the entrepreneur has brought back to Saint-Germain a place that seems to have always existed, so much so does it embody the memory of the great French brasseries.
Under the leadership of chef Amine Boudali, a former member of the Murat family, BRASS is a nostalgic affair. Red leather banquettes, white tablecloths, meticulous service and a hushed atmosphere: everything here recalls the golden age of Parisian brasseries. Decorator Dorothée Meilichzon has created a warm, woody interior, punctuated by American accents. From the large wooden bar to the coffered ceilings and mosaic floors, every detail contributes to recreating a timeless atmosphere.
An experience between past and present
In summer, the terrace offers a lively setting for dining late into the night. In winter, the interior becomes a refuge, ideal for a cocktail at the bar or a meal in the back room, a veritable cabinet of curiosities. In keeping with the spirit of the neighborhood, BRASS also evokes memories of the jazz era: a red piano will soon welcome musicians, reviving the festive atmosphere of the brasseries of yesteryear.
A very “French Touch” menu
In terms of cuisine, BRASS takes a classic French approach, executed with precision. There’s onion soup au gratin (€9), duck foie gras (€22) and bread tartine à la moelle (€14). Among the main courses, fillet of beef au poivre (€33) and sausage au couteau purée (€19) will appeal to lovers of tradition, while sole goujonnettes with tartar sauce or sea bass tartar with cucumber and granny smith (€22) add a touch of summer freshness.
For dessert, the French toast brioche (€14) shines with its airy texture, while theEton Mess with forest fruits (€12) ends the meal on a light note. A balanced menu, without excess, but designed for pleasure.
