Bistrot Sauvageon: the friendly address that revives the 19ᵉ

Not a marketed concept, but a true bistro soul. Bistrot Sauvageon breathes new life into a neighborhood and a forgotten tradition.
In the quiet of Paris’s 19ᵉ arrondissement, between Colonel Fabien and the Buttes-Chaumont, a forgotten old bistro is being reborn as Bistrot Sauvageon. Three friends, Thibault, Guillaume and Sylvain, renovated the place from top to bottom in less than two months, with the desire to recreate a place where people come as much to eat as to have a good time.
There’s no pretentious decor or imposed dress code: we serve in sneakers, with a smile, and above all with a sincere desire to please. It’s this kind of neighborhood address that Paris should cherish more: a simple, lively and warm bistro.
Generous, instinctive, no-frills cuisine
No long menus here. Every day, a spontaneous cuisine, based on common sense and pleasure. The classics are there, revisited with a personal touch: organic mayo eggs with mustard pickles, coquillettes croquetas with homemade ketchup, cordon bleu rolls (with mint pea cream) or knife-grilled sausage with homemade mashed potatoes.
And how can you resist the Croque Bonheur, in a meaty or veggie version, with its crispy fries? For dessert, the dark chocolate mousse, twisted with olive oil from Provence (a dinguerie), is a nod to Guillaume’s home region.
A natural, cheerful cellar
Sylvain, the “wine seeker”, travels the vineyards (often by bike!) to fill the cellar with sincere, lively wines. Wines from friends, more specialized bottles or the glug of the day: everything is selected with passion. Drink in or take away, in the same spirit of sharing.
Bistrot Sauvageon is a neighborhood address that we’ve become very attached to. We like to share it with friends and colleagues, and enjoy the good humor of the Sauvageon trio, not forgetting Bench (the restaurant’s adorable mascot)!
