Caviar and Chocolate: the bold alliance of Kaviari and Valrhona

When chocolate meets caviar, a new taste experience is born. Kaviari celebrates its 50th anniversary with Valrhona with an exceptional mousse, where the intensity of cocoa dialogues with the iodized delicacy of caviar. This creation brings together two emblematic houses of French gastronomy, sublimating know-how and audacity in a unique dessert.

The origin of creation

It all began in Beaune, when Karin Nebot discovered the mousse prepared by chef Alexandre Marza. Seduced by this unexpected alliance, she decided to share it with customers of the Delikatessen Kaviari boutiques. Thierry Bridron, Executive Pastry Chef at the Valrhona Paris School, joined the project to perfect the recipe, creating a perfect balance between chocolate power and marine finesse.

A refined composition

Beneath a crunchy disk of Nyangbo 68% pure Ghana chocolate, the mousse made with Confection 80% Dominican Republic chocolate is airy and melt-in-the-mouth. The hazelnut and coriander praline heart softens the cocoa, while 20 grams of Osciètre Prestige caviar add a refined, iodized touch. Presented in a yellow box celebrating 50 years of Kaviari, this creation is a tribute to French elegance and excellence.

Availability and tasting

Available from November 15 for €59 incl. VAT, the chocolate-caviar mousse can be discovered in all Kaviari Delikatessen, at the Manufacture Kaviari and at Maison Valrhona rue des Archives, Paris. This rare alliance of Valrhona chocolate and Kaviari caviar invites you on a sensory voyage of discovery, where gourmandise and sophistication come together to offer an exceptional gastronomic experience.
