Trained at the École Hôtelière d’Avignon, he started out in pastry-making, a discipline in which he shone early on, placing 4ᵉ at the Concours National de Pâtisserie in 1998. He then moved on to prestigious establishments, becoming chef at Le Violon d’Ingres (1 Michelin star) alongside Christian Constant. Then, for thirteen years, he ran the kitchens at the highly confidential Cercle de l’Union Interalliée. In 2023, he joined the Hôtel Molitor Paris, where he shaped a modern and demanding culinary offering. Today, at the helm of Le Céladon, he creates refined, contemporary French cuisine. His creations respect the seasons, are allergy-friendly and are based on the excellence of the product. Through his dishes, Chef Gbiorczyk defends a precise, warm and subtle gastronomy, faithful to the DNA of the place.
