La Biscuiterie: an experience in the art of biscuit-making

Café Jeanne welcomes gourmands in a hushed setting, perfect for escaping the hustle and bustle of Paris. Here, pastry chef Narae Kim unveils a new edition of her tea time La Biscuiterie, acclaimed from its first creation for its refinement and poetry.
Conceived as a precious collection, this tasting is presented in a refined case to be shared by two. Each cookie is a piece of goldsmithery, with ultra-subtle, low-sugar flavors, a world away from the excesses sometimes associated with holiday pastries. Peanut Cat’s Tongue, Fine Butter Spritz, Korean Gangjeong or Almond Boudoir… nothing is left to chance. Each texture evokes a memory, each aroma triggers an emotion.
Chef Narae Kim, as discreet as she is elegant, is the embodiment of this new generation of talent, with her sure touch and refined aesthetic. A fair and sincere vision of patisserie, serving taste rather than effect. This true elegance is also reflected in the signature infusion that accompanies tea time: a bespoke creation, with delicate herbal notes, matched like a wine to its sweets.

Winter’s most refined sweet moment

Tea time continues with a lukewarm cookie with a melting heart of Dulce de leche, served with a round vanilla crème crue. Then come the crispy gavottes, with sobacha buckwheat or dark sesame chocolate, a real play on texture. Finally, autumn fruit tarts (pear, apple, quince) conclude the gustatory promenade like a stroll through a golden orchard.
Available daily from 3pm to 7pm, at a price of €65 (or €90 with a glass of champagne), this experience is best savored in the Park Hyatt’s lounges, by the fireplace, curled up in a velvet armchair. A moment out of time, to be experienced alone or with a partner, in total intimacy.

Le Chalet du Park: an air of altitude on Place Vendôme

Another exceptional experience, the Chalet du Park, returns to the hotel’s inner courtyard. This ephemeral mountain refuge, available by privatization, blends raw wood, furs, handcrafted chandeliers and a hushed Christmas atmosphere.
Designed for 6 to 10 guests, this cocoon hosts lunches and dinners by Michelin-starred chef Jean-François Rouquette. On the menu: Raclette with three cheeses, charcuterie from Maison Baud, pommes grenailles and comforting desserts. And let’s not forget the truffle menu, for those who appreciate the exceptional, with white Alba or black truffles, depending on inspiration and the season.
