A New Year’s Eve dinner orchestrated by chef Damien Gomes
For December 31st, Chef Damien Gomes has created a subtle seven-course menu. An amuse-bouche of langoustine tartare, delicately enhanced with champagne jelly and golden petals, opens the ball. This is followed by scallop carpaccio with citrus and caviar, then roasted turbot with creamy spinach and herb-glazed parsnips. The meal continues with fillet of beef, potatoes and mushroom confit, sublimated by a full-bodied jus and slices of truffle. On the cheese side, Chef Damien Gomes proposes a truffle-aged Brie with pumpkin seed praline. For dessert, guests will discover a nougat mousse, pistachio and almond heart, soft cookie and vanilla crunch.
Last but not least, a yuzu meringue & caramel vanilla cracker puff will bring this high-flying gastronomic experience to a close.
