A historic setting for a timeless evening

Set in one of Paris’s most beautiful monuments, the dinner takes place in the private salons of the Institut within the Hôtel de la Marine. Restored with remarkable care, the setting is spectacular, blending heritage, elegance and solemnity. From the moment you arrive, the atmosphere is hushed and intimate. Everything invites you to disconnect, contemplate and share. It is in this setting steeped in history that guests are invited to enjoy a complete sensory experience, far from the hustle and bustle of Paris, but right in the heart of the capital.

A menu signed by exceptional chefs

This Valentine’s Day, Éric Briffard, Meilleur Ouvrier de France, and Chef Fabrice Danniel have imagined a gastronomic menu based on seasonal produce. The experience begins with old Comté gougères accompanied by champagne, before giving way to a succession of precise, delicate dishes. Golden scallops with Timut pepper, Landes poultry supreme with black truffle, delicate desserts with hibiscus, exotic fruits or candied chestnuts: each plate reflects the savoir-faire and exacting standards of the Institut.
The bread, made by Le Cordon Bleu Paris bakers from ancient flours and natural leaven, completes the ensemble. Easier to digest and more aromatic, it illustrates the attention paid to every detail.

A guided oenological immersion

The oenological dimension is central to this experience. Chef Sommelier Armando Coto accompanies the dinner with carefully selected food and wine pairings. Champagne Comtes de Taittinger, Gewürztraminer Grand Cru, Chambolle-Musigny or Coteaux du Layon punctuate the tasting. Each wine is presented and commented on, offering a genuine introduction to oenology. Alcohol-free alternatives, conceived with the same exacting standards, are also offered, so that everyone can enjoy the experience to the full.

A year-round experience

In addition to this Valentine’s evening, Le Cordon Bleu Paris offers a rich program of culinary and oenological workshops throughout the year at the Hôtel de la Marine. Masterclasses, cooking classes, patisserie workshops and wine tastings allow the general public to discover the educational and gastronomic excellence of the Institute in a unique setting.
