From an early age, Nicolas developed a passion for the sweet art of pastry-making, and trained with such great houses as the Ritz Paris and Dalloyau in Tokyo. His international career, notably in Saint Petersburg, enabled him to develop a unique signature, combining elegance, technique and inventiveness. Since his arrival at Lutetia in 2019, he has been creating pastries that tell stories and celebrate gourmandise through consistently masterful textures, flavors and design.
