Le Royal Monceau – Raffles Paris entrusts the reins of its pastry shop to Yazid Ichemrahen. Globe-trotter with the biggest names in the profession, from Angelo Musa to Joël Robuchon, and World Frozen Dessert Champion.

Yazid Ichemrahen found refuge in pastry making from his childhood, while he was looking for an escape from his difficult family past. Raised by a host family, he discovered his love for baking through the cakes brought back by their baker sons. Inspired by these simple moments, he thus nourished the dream of becoming a pastry chef himself. Despite the challenges, he persevered and was accepted into an apprenticeship by Pascal Caffet, a renowned chef.

From there, he had a series of experiences, working with great talents such asAngelo Musa et Joel Robuchon. These experiences shaped his character as well as his passion for pastry, propelling him to the position of Pastry Chef at Royal Monceau – Raffles Paris.

His journey then reflects his determination to overcome obstacles. But also to seize the opportunities that present themselves, inspiring those around him with his mantra: “Responsibilities are not given, they are taken. »

Yazid Ichemrahen the new Pastry Chef at Royal Monceau – Raffles Paris, embodies an artisanal and authentic approach to luxury pastry. Its philosophy is based on simplicity and accessibility, while preserving emotion as well asexperience of his creations. In collaboration with Alexander Favre, he is developing a new sweet menu highlighting the raw products and know-how of local producers.

For him, luxury lies in the quality of the emotions aroused by his desserts, rather than in their price. With a strict rule of three ingredients and three textures per dessert, he favors the purity of flavors and the richness of taste experiences. Its entrepreneurial approach combines tradition and modernity, while rigorously respecting the products.
