The Delano Café by Thierry Marx, located in the hotel’s inner courtyard, offers a unique experience. With its 200 m² of greenery, this space is designed to enhance moments spent at the Maison Delano. Dishes, such as green crab ravioli or pearly cod with coconut bean stew, combine indulgence and generosity, while celebrating the richness of fresh produce. “These are simple recipes that can be found in good Parisian cafés.” Explains Paolo Minelli.
A sustainable approach at the heart of Maison Delano
Sustainability is a core value for Chef. By favoring short circuits and promoting local producers, Delano Café offers cuisine that respects the environment. “It’s very important for us to value our suppliers. Without them, we’re nothing,” Paolo Minelli recalls with conviction, highlighting the importance of partnerships with market gardeners and farmers in the Paris region.
This eco-responsible approach is in line with a strong trend in the luxury hotel industry: according to a survey by the Accor Group, 94% of customers attach importance to the ecological initiatives of their establishments. A strategy that could become a major asset for Maison Delano.

Maison Delano innovates with its Brunch, an experience designed for Parisians and tourists alike. The idea? After a shopping spree in the chic Rue du Faubourg Saint-Honoré district, visitors can savor generous dishes in a cozy, refined atmosphere. Gourmet salads, shareable desserts and valet parking combine to transform a classic brunch into an exceptional moment. “I want them to have a smile on their face when they leave Maison Delano.” The chef confesses.
