Chef Carrie Solomon finally opens her own establishment, after years of successful collaborations and residencies. Located in the Sentier district of Paris, Chez Carrie will offer comfort food blending French and Californian influences. Signature dishes include deviled eggs, carrot cake ice cream and Caesar salad with seasonal vegetables.
The address also promises a brunch not to be missed, accompanied by homemade kombuchas or carefully selected natural wines. Expected to open at the end of September, this is part of the current trend for neighborhood bistros revisited with personality.

Le Coyote: the queer, gourmet saloon in the Marais
Out with Gramme 3, in with Le Coyote! Chef Marine Gora has transformed her Marais address into a contemporary, inclusive saloon. Stetson atmosphere, cow’s head and offbeat decor for a free-spirited, festive canteen.
On the program: gourmet cookies in the morning, refined tapas in the evening, and maybe even a few dance steps as night falls. The idea? Break with the codes of the food business while continuing to seduce the neighborhood faithful.

À La Renaissance: a mythical bistro revisited
A piece of Parisian heritage is changing hands. The À La Renaissance bistro, open since 1995, has been taken over by the duo Carina Soto Velásquez and Joshua Fontaine, who were behind the Candelaria and Mary Celeste cocktail bars.
The idea is clear: keep the soul of the place, its 1950s décor of red moleskin and tired neon lights, while adding a contemporary touch with natural wines, a menu of French classics at lunchtime, and cutting-edge cocktails and plates to share in the evening.

Envie, le banquet: an XXL buffet and an eco-conscience
This is undoubtedly the most ambitious project of the fall season. Network star chef Eloy Spinnler is hitting hard with Envie, a 500 m² all-you-can-eat buffet restaurant in the Haut-Marais district. Over 60 dishes and 15 desserts will be offered daily, in a decor designed by Dorénavant Studio.
This temple of generosity is part of a well-thought-out anti-waste approach: smaller portions, working with whole products, rewards for customers who finish their plates. In the kitchen? Mackerel gravlax, kebab revisited, blanquette, pâté en croûte, as well as vegetarian creations and spectacular desserts.
