For the festive season, Pierre Hermé is rolling out an ambitious, poetic and resolutely committed Christmas collection. Called Abysses, this plunge into the depths of the sea combines haute pâtisserie, artistic design and ecological awareness.

A Christmas between art and ocean

Every year-end, Pierre Hermé unveils a new collection, conceived as a sensory exploration. For Christmas 2025, the pastry chef celebrates the fragile beauty of the oceans with Abysses, a series of creations inspired by the aquatic world. This theme is based on a collaboration with ceramic artist Courtney Mattison, known for her hand-crafted sculptures of coral reefs. With its organic textures, mineral colors and free-form shapes, the collection evokes an enchanting and complex underwater world.
Here, visual emotion meets taste. Each piece is conceived as a work of art in its own right, where form and substance interact, where each detail tells a story, the story of an ecosystem to be preserved, a taste to be revealed.

The Abysses log: architecture of taste

The centerpiece of the collection, the Abysses log embodies the chef’s artistic and sensory approach. Beneath its sculpted dark chocolate shell, with reliefs reminiscent of tormented corals, lies a complex, refined composition: hazelnut praline, pure Belize 64% dark chocolate, a hint of lightly smoked Nori seaweed, and a tangy yuzu gel.
The tasting experience unfolds in several layers, like a gradual immersion: the sweetness of the praline, the intensity of the chocolate, the discreet umami of the seaweed, then the brilliance of the yuzu in the finish. It’s an intellectual but accessible log, demanding without being demonstrative.

Masterful proofreading of in-house signatures

Alongside this exceptional piece, Pierre Hermé also offers a reinterpretation of its great classics in the marine spirit of the collection. It includes the emblematic Ispahanin which the trio of rose, raspberry and letchi are combined in a refined, airy structure.
The log Infiniment Vanille log sublimates the world’s vanillas with the precision of a goldsmith. These creations pay homage to French haute pâtisserie, combining technique and emotion. Available from €98 (for 8 people), they perfectly embody the Hermé style: clear, intense, elegant. Book them in December for a festive tasting experience that’s not to be missed.

Anthéa’s signature log, Chocolate & Pistachio

With AnthéaPierre Hermé revisits the gourmet alliance of dark chocolate and pistachio, in a sophisticated, perfectly balanced version. Beneath a dark, elegant shell are a cocoa cookie, creamy chocolate, pistachio praline and pure dark chocolate mousse from Belize (Plantation Xibun, 64%). A touch of fleur de sel enhances the whole with finesse.
The tasting is dense, bewitching, but never heavy. Available in 12-person format at €130, Anthéa is a generous, racy signature log, ideal for cocoa purists.

The exceptional Nérée, Nori Seaweed & Yuzu log

A veritable chocolate sculpture, the Nérée log is an exceptional piece imagined as an immersion in deep waters. Its shell evokes the relief of a coral reef, while at its heart, a play of textures takes place between pure Belize dark chocolate, Nori seaweed, hazelnut praline and an intensely fragrant yuzu gel. The result is a fascinating balance of bitterness, saltiness and tangy freshness. This rare creation, designed for 12 people (€430), is only available on December 23 and 24, to order. A log conceived as a suspended moment, for lovers of haute pâtisserie.

Macaroons and sweets: submerged treasures

Another highlight of the collection is the limited-edition macaroons, presented in a box inspired by the reflections of the ocean. Pierre Hermé’s original creations include “Loomi” (dark lemon and dark chocolate), “Séréna” (mandarin and gingerbread), and “Truffe noire & pain grillé”, a daring alliance that evokes the discreet luxury of the festive season.
As for chocolates, the “Récif” boxes, dressed in shades of blue and gold, contain truffles, marrons glacés and chocolate bonbons. A portion of sales is donated to The Coral Planters association, working to restore coral reefs.

The Advent calendar: everyday pleasure, lasting beauty

Once again this year, the Pierre Hermé Advent calendar takes the form of an ephemeral objet d’art. Its spherical structure opens to reveal 24 gourmet treats, including mini-macaroons, shortbread, chocolates and exclusive confections. The attention paid to design, materials and fragrances makes it the perfect gift for lovers of fine pastry, but also for aesthetes looking for something original, elegant and long-lasting.
