Created by chef Paolo Minelli and sous-chef pâtissier Enzo Ohayon, the Easter egg embodies a generous, masterful interpretation of chocolate. Beneath a fine 70% chocolate shell, discreetly marked with the house monogram, lies a heart of hazelnut and almond praline, worked with Piedmont hazelnuts and Tuono almonds from southern Italy. The texture, both melt-in-the-mouth and slightly crunchy, is accompanied by a hint of salt to structure the whole and reveal its nuances.
Conceived as a creation that is as accessible to seasoned connoisseurs as it is to younger ones, this egg is part of a gourmet approach to cooking. It reflects a cuisine attentive to products, origins and balance, where each ingredient naturally finds its place.
