Cherry, the new New York-Italian address in Saint-Germain where you want to eat well (and be seen)

With Cherry, the Indie group sets up shop on the Left Bank, offering Italian-American cuisine in a hushed, Brooklyn-style atmosphere. A new spot to discover in Paris in September 2025.
After making its mark in Saint-Tropez, Ramatuelle and the most prestigious Alpine resorts, the Indie Group has arrived in Paris with an original concept: Cherry, an intimate and stylish table, located at 1 rue du Sabot at the corner of rue Dragon, right in the heart of Saint-Germain-des-Prés. An iconic district for an opening that won’t go unnoticed.
The address reinterprets the codes of New York clubs with an elegant Parisian touch. Designed by Sarita Posada, already at work on the Aimé Leon Dore boutiques, the décor features a subdued ambience, with wraparound banquettes, warm lighting and subtle vintage touches. Jazz at the start of the evening, hip-hop to close dinners (what could be better than Drake for dessert?): everything is designed to extend the experience beyond the plate.
Transatlantic cuisine, between Rome and Brooklyn
Chef Oscar Aviles Santana (ex-Zuma Dubai) is at the helm of the kitchen, offering a generous menu (as are the portions on his plates) that revisits the great Italian classics with a US twist. Here, vodka pasta rubs shoulders with NYC-style Caesar salad (huuuuge), homemade meatballs, cacio e pepe with a hint of lemon, or a well-seasoned kale salad. A cuisine that appeals to both comfort food fans and those nostalgic for the film version of Little Italy. We could just as easily see Al Pacino or De Niro sitting in a corner, in this Scorsese-style setting.
The cocktails, too, are in keeping with this transatlantic spirit, with classics like the Dirty Martini, the Negroni (which you can try in its dirty version, a Cherry classic) or theOld Fashioned, classic but formidably effective. Nothing ostentatious here, just the right amount of precision and balance, as in their Chili Kiss, which we highly recommend.
Indie Group, the festive galaxy expands
Founded by Tobias Chaix, Vincent Luftman and Raphaël Blanc, the Indie Group is multiplying its large-scale projects, from beach clubs to festive restaurants. They have already created La Sauvageonne, Playamigos and Pablo in Saint-Tropez, as well as Le Cat Club in Courchevel and a mountain version of La Sauvageonne in Megève. Cherry is part of this dynamic: a place designed as an experience, with a strong identity and a real sense of detail.
And if Saint-Germain wasn’t yet on the Indie map, this opening marks a new stage for the trio, with Saint-Barth already in their sights. Suffice to say, this little corner of the Left Bank will soon take on the air of downtown Manhattan – with Parisian charm to boot.
A table that awakens the neighborhood
In a neighborhood often stuck in its classicism, Cherry injects a nice dose of freshness and urban culture, while respecting the chic, discreet DNA of Saint-Germain. An address that could well become the new landmark for dinners with friends, discreet nocturnal rendezvous and rhythmic end-of-nights. It’s a restaurant to keep an eye on, and one to book now.
